Quick and Easy Chicken and Leek Pie

Ingredients:

  • 2 x chicken breasts
  • 2 x leeks
  • Creme Fresh
  • Mustard
  • Puff pastry
  • Plain flour
  • 1 onion
  • Chicken stock
  • 2 x garlic cloves

Method:

1) Start by cutting your chicken breasts into small chunks, leeks, garlic cloves and onion.

2) Preheat the oven to gas mark 6 (180degrees) Heat a small amount of olive oil in a pan and add the chicken. Cool until white all the way through.

3) Add the garlic, onion and leeks. Cool until soft.

4) Boil water in a kettle. Dissolve the chicken stock cube in 450mls of the boiling water and add to the pan.

5) Stir in 2-3 tablespoons of the cream and 2 tbsps of plain flour. Add 1-2 tsps of mustard and stir thoroughly.

6) Once cooked through, add to an oven prove dish.

7) Cut out the correct size puff pastry to lay over the top of the dish and add it on the top.

8) Place in the centre of the oven for approx 20mins (or until done).

Voila! I accompanied the pie with garlic buttery cabbage and green beans.

Cliché Beginning

I hope you all had a very merry Christmas regardless of the current situation. That’s me enjoying my Ferraro Roches and Aldi version of Baileys white choc on Boxing Day.

Now Christmas is over, I’m thinking ahead to new year. Will it be another cliché? Trying to lose some ibs for one month but then relapse after a month or so? Signing up for the gym to go maybe once and think that’s enough?

The answer is … maybe.

Due to my ill health this year and me not watching what I eat for most of it (bar Gousto for a couple of weeks) I am now at the heaviest I have EVER been. I am 18.5 stone. It’s crazy!

What’s worse is, I can really notice the impact on my health (regardless of Covid). My breathing is hindered by the fat around my neck, shoulders snd breasts, I stop breathing during my sleep, I snore a colossal amount, my neck is joined to my face, I get tired out doing nothing and my PCOS has gone crazy. Forget 5 o click shadow I’ve got 9am shadow. I’ve also been on my period since Nov 3rd….. non stop and counting!!!! God knows how I’m not anaemic. Therefore this is not going to be a sheep following some fads. This is going to be a serious attempt at getting my health back in order. If I’ve learnt anything from this shit year it’s that your health and happiness are all that matters (there’s the cliché).

Motivation or Lack of

I don’t know whether it’s the intense humid heat that’s made me lethargic and lacking energy this week or just pure laziness. I’ve done absolutely no extra exercise. I’ve had zero motivation whatsoever.

After a days work in full PPE in the hospital, sweating and aching legs make getting up and going out to exercise once getting home even harder.

What does not help is that I am way overdue on my period. My hormones are still all over the shop.

Just need that bit of mentality back to get out of the rut that this week has been.

What do you all use for motivation when you get like this?

Weekly Weigh In Wk1

As promised here are the figures for my first week. A step in the right direction after not exercising as much as I would have wanted to this week but certainly cutting down on carbs and portions! And this is post dinner.

Start of the Weigh Ins

I know you shouldn’t weigh yourself constantly and if you build muscle you weigh more than if you have fat. BUT I am still going to do weekly weigh ins for something for me to focus on.

Therefore I shall post my weight weekly to see the fluctuations and, hopefully, results.

As high the number is – here is my first weigh in from yesterday night.

Reality Check-in

55930045-reality-check-red-rubber-stamp-over-a-white-background_1_origAs I sit here about to type this post, I’m struggling to know where to begin. There has been little that hasn’t happned since my last proper blog post.

So I thought I would have a brief check-in and catch up with you all. Whats been happening my end I hear you ask? Well:

  • I managed to run a half marathon. Those of you who have followed me since day one will know that this is a big achievment for me as somebody who does not like running.
  • I finished my degree and moved back home. Uni degree passed and I have been working as a qualified professional for nearly three years now.
  • Split up with girlfriend. Unfortunately some things are not meant to last.
  • Went to Peru and walked the Inca Trail. Absolute holiday of a lifetime. I will make a post about this later.
  • Met someone else. Yes I do believe in love after love.
  • Broke ankle. Long story short… Ireland+alcohol+bingo+disco= broken ankle.
  • No running for over a year. The broken ankle along with mega chest infections have hindered me from my running and to be honest I have been making every excuse since then to carry on not running.
  • Moved up north and in with gf. Change of scenery and job. Loving the house, my partner and our little kitten.
  • Become a carbosaurus. My gf eats pretty much everything carby and not much else and I have taken to the habbit as it eases making meals etc.

All this said, I am officially back at square 1. In fact, I am most likely heavier and misfigured than I was when I started the blog. I will post a picture of my current state in a later post (not looking forward to that). Hopefully this will spur me on, along with writing these blog posts again. I know that something has to change, again. Knowing the amount of effort needed last time, I am not looking forward to this.
