15 Minute Fiery Prawn Linguine

Ok so I’m going to try and not post too many recipes on here but today me and my girlfriend made one of the best dinners I have had in a long time. And it took around 15 minutes! What’s even better is all you have to do is buy the ingredients, chop them up and cook them…. Even I could do it.

So what you need is:
King prawns
2 cloves of garlic
1 red pepper
A couple of button mushrooms
3 Spring onions
1 chilli
Lemon zest
Olive oil
Linguine pasta

You can add anything else you want or adjust the amount of any ingredient to suit yourself. If we make it again I would defiantly add a couple more vegetables and swap linguine pasta for tagliatelle.

1)Right, firstly I’d finely chop the peppers, onions, chilli and crush the garlic. Basically get everything ready so you can just throw it in.

2)Heat some olive oil in a frying pan or wok and add the chilli and garlic. Grate some lemon zest into the mixture.

3)Once the garlic, lemon and chilli is sizzling nicely in the oil, add the prawns and onions.

4)Pop the pasta in a saucepan of water and bring to the boil.

5)Add the rest of the vegetables to the frying pan/wok and stir constantly until sizzling hot and starting to brown.

6)Drain the pasta and pop a good heap on the plate. Add some of the prawns and veg on top of the pasta. Finish off with a sprinkling of finely chopped parsley.

It looked good in the pan but we couldn’t do the whole chef presentation thing when we plated it up so I didn’t bother with a photo. Just ate it. Hope you enjoy it too!
